Okay. My mash is a little cool.. Do I add more water to warm it back up? It tastes a little sour, and it's never been below 65 degrees and I've wrapped my buckets in blankets.

After the yeast has been pitched don't think adding additional water would be a good plan. Least I never heard of any strategies to add more water at that point. Cooler temps (within reason) should just slow down the ferment a little.
