I did a corn mash run this past wed (couldn't get to a computer to let you know how it went until today). It took 2 1/2 weeks to ferment, the temp was 70 to 72F in my basment. I had a little over 5 gal of mash. The run went really fast compared to the rum batch I did a few weeks ago. I had some copper packing in the column this time too. I fired it up at 8:30 am, was getting output by 945 am. I had it in total reflux until about 1030. threw away the first 250ml. I had some reflux going during the whole time (the reflux valve wide open and the output only cracked open) At 2 pm, I had collected 3 quarts of stuff. The first two were 185 proof and the third was 178 proof. During that time, the temp was pretty consistant at 178 to 180F At 2, the temp rose to 195 and practically no output. I even shut off the reflux side. I let it go for another 15 min and got nothing. Felt pretty good about this run and plan on starting another just before Thanksgiving.

"Sounds like a fine run. I got the 12 gallon CMWG wash on to cook a couple of hours ago. Since some of the resident exspurts seem be in the naggin mode on my expeditious run times..have decided to torture the snot out of it and see how slow it can go. I am always up for scientifical testing ya know? Also discovered a secret on the internal elements. Plan on it being a Power Management exercise..water to the column seems to be a moot point. Thats the key. If I dont die of old age waiting for it to percolate I will repoat back with the final totals.

how is this considered a ""fast run""? I kept the temp at 178-180. The amount of output was a dribble coming out. tasted pretty strong to me (just like everclear)"

I use the PSII with the 3" column and when in Pot Still mode, it takes about 3.5 hours for a 5 gallon wash that is around 10% alcohol. This includes my heat up time.

My 3 gallon run takes about 2 hours from start to finish. Straight pot still, and normally get around 2 quarts. That's not including fores and tails.

"Thanks for the feedback. I am about to run some applejack. Will be 6 gallons in a potstill w/ propane fuel. I have not been seperating heads, middle run, or tails. Just running it all as one. I will time this run more closely and see how long it takes. For some reason, it seems it is taking me longer than everyone else that have blogged in their responses. I will keep all advised.

Gryph, dont be fooled by rapid stillin times....that may be fine for others but dont hurry your run until you are confident that its runnig the way you want and the only way thats gonna happen is to make a bunch of runs and figger out what works for you. I'm not saying anybody is wrong but you need to figger out what works for your still and setup. It takes me about 5-6 hours to fill my still and get to the end but thats what makes the best likker from my still.

"Indeed Iam, and thank you for asking. I have heard that on a 6 gallon run the volume that consists of 'foreshots' would not be significant enough to affect you given it were diluted in the end product, although I do not leave that to chance.

It seems like different people want different things out of this process. Some seem to want to make "the perfect liquor" and some just want to make liquor. Both avenues seem valid to me. I find myself, as with all my "pet projects", trying to attain perfection at it. Reading, studying, asking questions in pursuit of doing it the "best" way possible. That is just what flicks my tickle though. Some people I think just enjoy the process overall and aren't concerned with "perfection" just want a suitable end result and that is fine too! To each his own!

I hate the taste of whiskeys. A friend from ireland let me try 3 diferent brands of irish whiskeys. None of them made me wish i didn try them and one even tasted nice. It was his private label.

As far as what we buy off the shelf, I gues foreshots mixed with heads, hearts and tails then diluted to 40% are not too dangerous especially if put in a fancy bottle with a name brand on it.

POLITICIANS must own the booze factorys.

"I need some help. I am running some stuff called applejack as we speak. 6 Gallons unpasteurized apple cider 5 lbs sugar and yeast have been fermenting 2 1/2 weeks. My pot still is at 155 degrees and liquid running like a racehorse. Initial check on alcohol before distillation showed about 7 or 8%. I am afraid to turn off the water in an effort to run the temp up to 174 degrees. Is all this stuff I am getting at 155 degrees methanol?

Please explain to me how you checked the alcohol before the distilling-- i am confused are you still fermenting something?? Sorry, maybe i just cant read.
