"How long time Should it take to destill a 23 L mash of 20 % ? With the max speed ?
And what collection speed is recomended?
I have red the Use & Care Guide and it says A optimal collection speed in order to maximize the purity of your spirit is 12 - 15 ml per minute ( 2-3 teaspoons) Is this for both the Pro Series II and the PSII High Capacity. Then i can't see how the PSII High Capacity is faster!
I'm only getting 3,5 L spirit with my new PSII High Capacity and got 4 L to 4,5 L with my Pro Series II. Anyone know why ?"

It takes me 6 -7 hours to run 5 gallons at a slow and steady rate and thats only keeping 2 quarts of hearts. But its a pot still -beerkeg cooker with an internal element so maybe it just wont produce as fast???? But man that sure would be nice to use something that can travel that fast."

"I just ran my first 23L through my Pro Series. I was nervous as this was my first attempt at any of this. I have copper in my column and use it in reflux mode.
- Turned the propane burner on at 9:20 - Temp at the top of the column reached 177*F at 9:50 - Removed first 250ml at 9:55, 85% - Filled first 1L bottle by 10:15, 92% - Filled 2nd 1L bottle by 10:39, 92% - Filled 3rd 1L bottle by 11:04, 92% - Filled 4th 1L bottle by 11:35, 90% - Temp spiked to 200*F at 12:00 noon. Had another 500ml of product at 86% - Shut things down at that point.
The end result was 4.5L of produce 90.4% in 2hrs and 40 min, clear as a bell and no smell. My wash was simply 8kg of table sugar mixed with 23L of water and 134g of turbo yeast, one packet of liquid activated carbon. Worked for 15 days than added a clearing agent. Let sit for 3 days before racking into a carboy. Let sit for another 3 days.
Happy as hell with the product so far, just have to cut to 40% and decide what I want for flavorings. I think I'm gona love the new hobby."

"Dan - you are pulling way too fast for reflux mode. I will agree that your abv is not bad at all, but I feel you'll get a better product if you slow down a bit. Pulling at that speed negates tasting & smelling for the heads, hearts & tails. Plus whenever you get up to temp you should have the heat lowered to where your reflux water controls the output, then you can let the column stabilize & reflux for 45 min to an hour - which is really the whole point of your column.
You are quite free to do it anyway you like, but think about slowing down a little, I think you'll like the outcome."

Thanks Ratflinger, I'll try to slow things down a bit next time. would you say a temp of 172 would be better also?

Yes 78*c (172.4*f) would be better for pulling the best product. These are just suggestions - if your setup is working to your satisfaction then I have no problem with that.

I let my sugar/tomato paste wash set for about 4 weeks to clear and it smells like apple cider. Is this still good to run? hydrometer still reads .99
