"Greetings... Thank Ya'll for all the great post that has helped in all my decisions so far.... I am about to order (as soon as the lines not busy) & stuck on the last item...which Yeast?... I am ordering the PSII complete and the gold package fermenter for the purpose of hopefully making a clean vodka that i understand can be made from a simple sugar wash... Since i am new, i would like to stay focused on obtaining this one goal while i learn more about the process and would like some advice on which yeast would provide the most dependable results so i can order enough to learn on...I am guessing enough for around 12 rounds of fermentation or should i up the number before trying to taylor my yeast for my needs.. Dependability over speed

EC1118 works on just about anything, cheap and reliable. The difference is you have to add nutrients. Some people don't like the turbo's saying they get off flavors. You really need to do several different ferments and make up your own mind. EC1118 is my choice.

"Ya know, I used alot of them also (EC 1118) and one day I was in the homeberw shop and the feller there suggested distillers yeast. Now since I'd never used this before I was of course skeptical, the bag is like 1/2 pound and will make lots and lots of washes. I reluctantly purchased the bag and said well maybe I'll use it someday. Well I did and the difference between the two yeast mentioned is not even recognizable. The price of EC118 somewhere around 2.50$ for 10 grams and that bag around 6.00$ I wish I'd tryed it sooner, prolly saved lots of mulah. It cant hurt to givera try and see whatcha think."

I'll buy some of that and give it a try, how much do you use with a 5 gallon wash?

In a five gallon wash, some use 1 & some use 2 packets. I've done both with no ill effects. I just eyeballed the amounts I'n the packets and used a cereal spoon to dip out same volume I'n comparison to the little packs. The EC1118 is 11grams ----- but lots say lots of healthy yeast is never bad. Try starting with 2 heaping spoonfulls, that should be at least 20 grams. Now it will prolly take a little more time to finish but to me that's not a prob. I know one spoon full will work but if one good two is better. HaHaHa hope this helps.

Nothing wrong with that bakers yeast either. I noticed in the background when you ferment with bakers yeast there's a bready flavor to your hooch. Its not unpleasent or foul just noticable. I never found that with EC1118 or the distillers yeast. -------For what its worth.
