"Hello all.
I searched the forums and I didn't see an answer to my question. I just purchased a HCII Extractor and I did my water/leak test yesterday. Everything went fine except for my digital thermometer.
I placed the thermometer probe in the bung and had the tip of the probe sticking out just slightly. When steam came out of the condenser, it read 150 degrees F. I placed the end of the probe in boiling water and it read 212 degree F, so i know that it reads correctly.
How far does the end of the probe need to stick out from the bung? If it sticks out too far, it'll be close to one of the water condensing pipes and I assume it won't read correctly either?
Please advise.

"For what its worth......my thermometer is all the way at the top of my tower. BUT --- IMHO temp is a starting point for the run but once it gets rolling I use the discharge to determine my collection rate. If your stripping well then pour the heat to it, if its a spirt run then I use the drip rate to determine the right temp. Just my opinion. "

I was under the impression that you always follow temperature when making cuts. So what you're saying is that the heads, tails, and hearts will drip at a different rate? "Cletus, until you've made several runs you prob. wont get the real gist of the cuts concept. IMO cuts happen after you've run ALL your hooch and collected ALL your runnings. THEN you use your nose and tastebuds to make your cuts. Nowthen once you've made enough runs to KNOW your still you will prob. be able to find the area in the run to know where the cuts are located. It might be a certain temp or even a certain time span but I wont tell you its at a certain degree or time in the run. Oh, and heads - hearts and tails should'nt drip at diff rates. Once you get to running - whether its hard and fast or slow and easy it will be a steady rate most times. You wont say - oh heres the hearts -NOW I can smell when they start and so will you soon but thats later. "

Ahhh. Okay. I gotcha. I see your point and after reading a few more hours, I think I can understand the concept of it all. Like they always say, practice makes perfect. I'll keep you updated on my progress! Thanks!
