Yeast For Cooler Fermenting Temperatures

"Good Day,
Can someone please recommend a yeast that is best suited for a 65 degree F fermentation.
I just moved into this historic house built above a spring which comes out of the ground in the basement. It's ideal for brewing for so many reasons except it keeps the basement at about 60-65 all year long. I don't want the yeasties going dormant!!

You can buy a brew belt at milehighdistilling.com then you won't have to worry about it.

Make sure that you start your fermentation warm (80-90F) and wrap a towel around it. The yeast activity will keep the temperature up. Also, do not sit the fermenter directly on the floor.

Thank you! I have some reflectix left over from wrapping the still, I'll use that on the fermenter too. If i'm going for an all grain mash, would using the EC-1118 produce a less flavorful hooch than Prestige's Whiskey yeast?

If you are making a whisky (flavored product), then you will want to use the Whisky Yeast. If you are going for neutral, then use the Vodka Yeast. Both have AG to break down the carbohydrates.
