"the recipe for irishcream in ""cordials from your kitchen"" was tops- i used double the amount of irish whiskey and treated the finished product with sorbate--it kept forever- where is that recipe???
here is the cream base recipe 1-14 ounce can of sweetened condensed milk 1-12 ounce can of evaporated milk 1-cup/8 ounces of whipping cream 1 cup simple syrup 1/4 teaspoon of potassium sorbate just mix well
simple syrup equal parts of sugar and water heat slowly to a slow boil stop the heating when mixtureis clear-yellowish
my personal symple syrup is 250 ml of white sugar and 240 ml of water. boil till clear and top up to 250ml with water. the idea being to be able to use it exactly the same as dry sugar.
im no longer positive of the sugar to water ratio."
