oh heck no I dont mind -- anytime. I forgot what thread I put that recipe in but search around and I'm sure it can be found. With that Gerber recipe, I'm tellin ya at 100 proof you can take a big whiff and it smells soft and smooth, not harsh and bitting. You'll see, just dont get greedy when you start collecting the distillate. Collect in small amounts and then tomorrow use your nose ---- you'll see.

Well Heeler as you know she is all done with a 55 to 70 finish using 8 ounce jars from Heads to tails. I live in a Red Oak tree area, i see where everyone uses white oak to age with, all my fire wood is red oak, is red oak ok to char and use ?

I dont think so ..... to high tannin content. You could try one of those 8 oz jars with a little piece and see what happens. It wont kill you to taste and try but I bet it tastes harsh. I've never used it but also never heard anybody else say they used it either.

How did the Gerber come out as a neutral???? Was it what you expected. I got 2 qts right in the hearts that was really soft and easy on the nose. I made REALLY greedy cuts. No extras. So good I started another one yesterday.

reading away and still trying to get a solid understanding on the runs -- for the gerber recipe , are you just doing a spirit run or stripping multiple batches of mash and then a spirit run --- sounds like this is reflux as it is more of a sugar wash??

RollEyesTo tell ya the truth, I never strip. I just like the slow and easy method. You could strip several runs and then combine them for a spirit run, that would'nt be wrong just different. My mind says, how neutral do you really want to get and with stripping and rerunning ya just keep getting more and more neutral. Try both and see what cha get.Cool

The gerber reciept only makes 2 qrts in a 5 gal. wash? Do you cut and run again or is that all that's needed just one run?

j744........what you'll find after you've made some runs is that, you will indeed get more than 2 quarts of distillate --BUT-- after you've made your cuts and if you dont get too greedy (haha) is that some of what you've captured is not gonna be what you want. You will have heads and tails in those jars too. Now you can rerun that stuff or can toss it out, but drinkin it is somewhat of a task. So in the end 2 quarts of hearts that you will cut (add water to) for the finished procuct (2.5-3.0 quarts) is gonna be the best. At least thats how mone works out best. Hope that helps.
