"Please correct me if I have the terminology wrong, I have read a ton......and only a few ounces have sunk in.
I started a 5 gallon sweetfeed wash on the 31st. It seemed to do well, I have the bucket sealed with a 1/4 inch hose off the top to a jug of water, it bubled slowly and made the jug look as if it was carbonated. I figured it looked good.
On the 2nd I started 2 more 5 gallon washes with the same recipe, same vent style. I labled the buckets 1-3 and in the 3rd bucket I used a differant brand of yeast. By gum that one flat took off! Seems to want to blow the water clear out of my venting jug.....so be it. Thats why I kept notes, to learn what works best. Bucket #2 has the same yeast as #1 and just seems to be puttering along.
I am assuming that the yeast in #3 is the best do to the amount of gas it is venting must be the better choice?
Now bucket #1 has seemed to slow.....I am guessing it is done. My question then is can/ should I leave it in the fermenting bucket till I am raedy to run it? I will run it on Sat.....should I strain it say Thurs....let it set till Sat. Do you gain flavor by letting it set? Or do I need to strain it right away?

You can let it set there for days.

div4gold is right. You wont gain more flavor by letting it sit but you get a better settleing effect. When you syphon it to your cooker just go slow and leave as much sediment behind as you can.
