"Hi everyone i have some ?? about the EC-1118 yeast.
1. How many packs should i use in a five gallon wash.
2. Do i need to rehydrate it like it shows to do on the pack or just add to my wash.
I have been using Fleischmanns rapid rise yeast in a corn and sugar wash and it is ok. BUT i have seen alot of talk on here about the EC-1118 and just wanted to try it.Any help will be great, as i am new to the fine art of distilling.

Gregory."

"Hey Greg...most of us on here have used the ec yeast and liked it. Its easy and dependable. You can use 1 packet or 2 -- 1 will take alittle longer to finish and since your just starting out go with 2 so you dont get inpatient waiting for it to finish.BigGrinBigGrin
You dont have to rehydrate but why not follow the instructions?? Its not that hard to do, I dont MOST times but either way will work for ya."

"I always make a sugar wash of about 15% I have one going now with over 16.

Fast fermentation produces ""off flavors"" believe that keeping the temperature down during fermentation and very slow distilling is the trick.

ec1118 is suposed to do 18% I believe that Lalvin would not deceive us becaus they have been arount too long.

I really want to push the wash to about 17% next time.

Ill see how this wash finishes fermenting.

---------------------------- (((JUST A NOTE)))-------------------------------------

I use a 24 hour constantly stirred starter bottle with 2 pkgs of yeast.
! lier of water and one liter of prepared wash that has beeb airated with an aquarium pump for 15 minutes before pitching.

I also aerate the wash for at least 1/2 hour befote pitching

I found a sugar wash method that involves a fer steps during the first week but it seems to work well and give me a clean finished product
:)"

"I got a 1 lb bag from the homebrew shop and I do use yeast nutrients sometimes in beer and likker mashes.

With beer I make a yeast starter in the liquid form so as to get a big yeast blast going. But with likker its a dry yeast so I just dip out some of the warm wash and add dry yeast to that and rehydrate it that way, seems to work alittle better, kinda kicks it in the ass to get it going."
