I don't have the "S" shaped airlocks, but mine are the straight tube with a cap over the tube top...I recently was fermenting 15# of sugar, h20, and corn meal using regular fleischmans baking yeast...after about 4 hours, the fermentation was so vigorous that my airlock was filling with wash...I've also had this happen with a straight sugar, h20 and yeast mash using turbo yeast 48...for the first couple days, I was cleaning or changing my airlock daily...I'm a newbie, so is this normal?, not sure, but it's happened with me a few times.

I've had the same problem a few times when ferminin high sugar mash. What I did was put two air locks in the lid. Depndin on how vigoris it;s working I might use two straight tube locks or one straight tube lock and a 3/8 hose stuck in a rubber cork and run into a bucket with bleach water about a third full.

I just had a thought here. WOW!!!LOL Dont you use a primary fermenter as in a plastic bucket for the first few days before transfering the fermanting wash into a container under air lock????"

You can just pull it off until the fermentation slows down, then refill it and put it back on. With all that CO2 coming off, an airlock probably isn't necessary provided you have some headroom in your bucket. I just leave the lid on _very_ loose for the first 12 - 18 hours or so. Once things settle down the lid goes on with the airlock."

If you are getting some real violent fermentation in the first stages you can also just take out the air lock and put in a plastic tubing and run it into a milk jug that has about an inch of water in it. Anything that bubbles out will just go into the jug. That keeps from making a mess if it bubbles over.

I think you must look at the specs for the yeast you are usIng. I use ec1118 and it clames 10to 30 C. 50 DEG. f. TO 86 DEG. f. I LIKE TO LEEP MINE AT ABOUT 65 slower fermentation produces less ""OFF FLAVORS"""
