My feed store offers 50pound bags of cracked corn chicken scratch for $12 but it also offers organic cracked corn for $25. Is the organic needed for the uncle jesses sour mash or will the cheap stuff be adequate?

Calishiner...if you didn't already buy your feed, why dont you buy --sweet feed. Now you ask why???? Well all the sweet feeds have mollasses on and in them and that just ads some goodness to the wash. With a UJSM wash remember your gonna reuse some of the backset (the leftovers in the boiler) for a PH boost and for flavor careover. I'm not saying you cant add the backset with just corn but the latter is the reasoning behind the UJSM recipe. Just food for thought.

I would love to use sweet feed. My problem is this though....I can't find an all grain sweet feed where I live. They only carry a pellet form of all grain.

"thats allright, remember-- your gonna scoop out some of whats in the bottom of the fermenter later and add more for the next wash. The grain is not going in the cooker just the liquid. The pellet form of sweet feed is just ground grains and it will work just fine and may in fact give off more flavor due to the fact that its ground. You cant mess up the recipe by using ground grains instead of whole grains. Givera go man it'll work fine with either."

"My personal sweet feed recipe.
For a 5 gallon bucket.
3-4"" all grain sweet feed.
5-7lb sugar.
1 oz miracle grow organic 8-0-0. It's made from sugar beet molasses.
1 tsp epson salt.
Enough hot water to melt. Then spray enough cold water to cool it down before you add the yeast.
On the second batch feed the yeast/grain from the bottom of the bucket more sugar/nutrients.
Backset can be used for the hot water but be careful about the PH. If I use more than 10-20% my ferments slow down.
Temperature control is very important 80-95' works for me."
