Yes you need to turn the heat down......once up to temp turn it down to hold at the desired temp, which is different for all stills. 212 is boiling water and in my opinion thats too hot unless your strippin your wash. Try this --until you get your rig figgered out just go slow and easy --set the heat to make a steady slow drip and that could be 180-190F. If you want to run faster you can but learn first.

Thanks for the quick replies. Scotty, I do not have it bypassed, just the standard control on the hotplate. Ordered it from brewhaus the same time I got my PSII 15 gal. I think the problem I have is how do you control boiling temp in a 15 gal kettle. It takes FOREVER to get it up to temp and with the reflux on I don't know how I would know the internal liquid temp. I don't want to turn it down too low and mess with the reflux. Like I said, I'm just learnin' how to do this and it's been a blast but I'm really tired up starting these runs and really ending up with nothing. Tell me what y'all think.

Mine did the same thing bigwheel. I was watching it climb from 70f and about 3 hours later it was at 81f. I thought I was going to be there all day and night getting up to temp. I walked to the back of my house and back to the extractor and BAM! 212f. I was flipping. I still don't know how I'm going to know what setting to put the hotplate on when I get to temp. Any ideas?
