"Hi, I'm new to the forum and since I've made a few posts I thought I should intrdoce myself.
I a Southern boy that has been transplanted to Nor Cal and have been here for quite awhile now. My Grand Dad, Father, and his brothers used to grow and harvest cane for making sugar and mollases to sell. As a natural progression they started making what they called ""Liker"".
I heard them tell stories about how hard working the cane field was and a couple of close calls when working the still. But from what I could tell the most fun and excitment came when my Father and his brothers ran the ""liker"" into other states to sell.
I've been making beer now for a number of years now and decided I should dabble in the old family business. I learned quit a bit from listening to the family stories but have learned a great deal more from reading on this forum.
I just made my first run this last week with a new BH EE 2 and I think It's a great product. A little slow on out put but a well made and fine running tool.
I ran a Persimmon and sugar wash in pot mode that was put together with:
10 lb very ripe persimmons
7 lb cane sugar
juice of 1 lime
3 beano tabs and enough water to equal 5 1/2 gallons.
After the run I set aside the first 200 ml to use as laquer/paint remover, I do wood work, collected jars of 250ml and ended up with 11 jars.
The second and third jar smelled off a little as did the last two jars. So they went into a gallon jug for a later run. The fourth had a little smell to it but tasted good so I kept it. 5,6,and 7 were really clean smelling and tasting. Jar 8 and nine started having a little more smell to them but were still good to taste so I kept them also.
After combining them I ended up with about 2 quarts at 45% and am wondering if this sounds about right?
It all took about 6 1/2 Hrs, like I said a little slow, and trying to keep the temp down through burner control, Blichman gas, was pert near impossible.
Anyway I know this is way to long but wanted to just say thanks to all on this forum and introduce myself.

Hi BW and thanks for the greeting. I have a tree out back thats a heavy producer. Soooo I do tend to have a few bags in the freezer for use throughout the year. If you wait for them to ripen up good they are so sweet it's almost like eating jam off a spoon. If you freeze em and then thaw them out when you need them you can just squeez them in your hand and they pop out of there skin right into the mash pot.

Git some independant water flow to your reflux condencer and give the thing a goodly amount of time to establish a stable gradient."

LW, I was running in Pot still mode, have'nt run in Reflux yet. I was wondering if my results were close to what they should be?

"I live 30 minutes from YeeHaw Junction. Didn't think anybody else had ever heard of it. I's just a cross road and a historic restraunt and motel. They have gone out of bussiness again. We used to get burgers when we passed through. Lots of history with cowboys and such there. There was another little bar down the road called The Red Alligator (afterall this is Florida) and that too is no more.
Oh and no cane fields around YeeHaw anymore - Okeechobee yes YH no."

"I saw yee haw junction when i was just exploring florida. All i ever saw there was the closed hotel and a sort of ice cream parlor/store that was caddy corner to it. I think i saw a sugar Mill/factory or something. It was on rt 60 i believe.
Florida guys we really aught to get together some time. My lady friend and I will be glad to travel and we like motels. We dont stay at other folks homes. I would like the get together to be at someones house. Mine is ok too.
If you live in florida you also need to visit HOLLOPAW. They sell all sorts of souvigneers saying
