Is it necessary to stir mash each day during fermentation? Is it necessary to stir mash at all?

No it is not necessary to stir it once its started.

When O2 is present yeast spend their energy multiplying. When the O2 is gone they then spend their energy makining ethanol. You want enough O2 too get a nice colony size but then you want them to do the job a making ethanol. So give it a good stir when you pitch the yeast ans close her up.
