Hmm, that sounds like something with some serious flavor potential!
I"m by far not the most experienced here with general fermentation, but it seems to me you can pasteurize the raw maple ,gently warming at around 50-60c,, should kill most of the wild microorganisms.
Get a small beaker reading and see what sort of OG you get with generous dose of syrup, to that measure how much sugar you might need ,if at all, to get an OG or around 1.09 in a large batch.
Ferment with something like a larger yeast ,not sure how much natural nutrients the maple has, you might have to add some if fermentation sticks,, after 3-4 days of fermentation add some more syrup, let it run until fermentation dies down, then rack to a secondary. At this stage you can taste to see if it"s sweet enough, if not add more maple. Let sit for a couple more weeks, rack and bottle.

It"s a very "mead" approach, though considering maple syrup should not be as complex a sugar as honey, this just might work.

ive used maple syrup in beer before.if you use it,i wouldnt use all maple because it would be overpowering.but some is nice. just boil it first, and skim off the foam and stuff on top.

ya well I think when I boil the sap down it has it plenty clean and cooking it on a fire just gives it that nice mellow Smokey taste but I was leaning more towards something in the distilling category because I want to age it what my master plan is that I want to enjoy a slight amount of my product but I was thinking seriously about having my birthday celebration and I want to make some fine liquor that I can age for a few years and I can let you all enjoy my work.......but Is their any where you can add some fruit in with it or........use the maple flavor in the final product before aging to give it some characteristic and that sounds like it could have some serious potential some where in their

Brenden, While college is good for some, experiance and growth is much better for others. If this is your hearts desire, and you are obviously computer literate, then for the next few years, I would search and research every thing related, You have a great heart and mind for this adventure. wish you lived next door to me, but who knows, someday you might.

Keep traipsing and yondering.

Than I woulld go to a farmer would be, present my knowledge and both of you go from there.
