I am currently fermenting some corn and 2row malt that i mashed before i started. It is on its 2nd interation now and I am doing it UJSM style. I am useing the whisky distillers yeast, and its still going strong.Has anyone used this yeast,in this way? Will it last for many interations if I keep it active? So far its doing fine.Any input on this stuff? Also, has anybody used this stuff on a rum wash?

Wineo,

No problem, I have carried it through 6 iterations, and have read of others going 20 or more and no problems. Thats for the yeast. I just ordered for myself some AG to add each time, as it aids the process, and more hooch for the effort, and also more taste of the grain. I ordered some pulinase enzyme also to try. I think Ag or beano will help you in future runs, but AG is cheaper.

I have also thought of adding a qt. of molasses to this wash just to see. Might make a great combination.

john,I have 2lbs of amelaze enzyme on order. I will use that, or do a mini mash of 2 row,or both! I still have some beano left too.What is that pulinase enzyme,thats a new one on me? Have you ever put some UJSM wash in some neutral spirits and ran it to get some flavor? Ive been thinking about all the posibilitys that you could do to add flavors,or change the flavor profiles by mixing it up a little and it seems endless.Have you ever tryed anything like that?

Hey all, I know this is the wrong place to post this, but for all that are following this thread:

I was doing the UJSM, and had setback ready to go. Just then realized i didn't have enough sugar to fill the recipie, So used dark brown sugar and qt. of molasses to compensate. Wjem distilled, a better taste than the original.

My opinion, you may want to give it a try.

So did you make UJSM rum? Hmmm. Sounds like you may have something there.

Sorry wineo and others. Pulinase is a new one on me too. Meant pectolase. See what a sip of that stuff will do?

AH! Thats like pectic enzyme I think? Got my 2nd interation of corn/malt loaded in the still,along with the 1st run distillate.Going to run it tonight.Put some new corn in,and quite a bit of amelaze enzyme,and 1/2lb of light DME in each bucket.Ive got 29ltrs to run. wheat germ is still chuggin away.
