Tools: BH HC PSII in Reflux setup with 8 Copper mesh rolls in tower, Blichman gas burner and at 5000 feet above sea level. Just ran my first Rum batch. I noticed that a lot of the molasses flavor was lost and it came out very "neutral spirit" like. Also seemed like it took about 3 hours for all (approx 3 liters), left with a LOT of wash, but could not coax anything else out...please comment with helpful suggestions.

If your looking for a rummy flavor prob be best to break the puppy down into the pot still mode. Not much flavor survives refluxing..now do give a little but not much. Use one or two copper rolls. I usually capture somewhere in the general vicinity of 2 to 2.5 qts on a good run form a five or six gallon wash. So think your good there. Always a bunch of liquid left in the mop bucket. This be speaking of refluxing here. I aint a big fan of pot stilling lol. Reminds me too much of Snuffy Smith in the funny paper.

ok i love my rum big knows that lol. but like big said if you want your rummy favor you need to run in pot still mood my still only 5 gals so if doing run i get about 4pints good stuff form a single run let it air out a few days taste great. if you going to do a striping run when you do a liqour run add a gal of wash back to your low wines that will help to add the rummy taste back. out of a stripping for me ill get about 3 to 4 qts i'll save that up till i get a gal then do a liquer run which for me is a gal of low wines and a half gal of freash wash.

BIG & TWW: Thanks for the insight. It was my first keeper batch also after cleaning the new unit. I will try the pot mode with 2 copper rolls. Should my yield be the same volume, but lower ABV? And is 3 hours for the High Capacity setup about right? I am running a 5 to 6 gallon batch in 8 gallon boil kettle. I am not sure where the cuts are so I tried 4 200 ml collections then a large one and after filling went to a second large one with about 500 ml. I threw out the first 200 ml, then am airing the 2 - 4 to identify "heads" and will probably need to count the final 500 ml as "tails." If anyone has recipes with molasses, I am interested. I have volumes of cane sugar and molasses. Learned to ferment from brewing, OK there.

i run 4.5 gals wah in my still most the time from 140 proof down the 80 that takes me about 4 hrs . i dont know about the highcapacity setup i run a old school almebic pot still. for collecting i the first 200 ml foreshoot. then i collect down in pint jars about ever half a pint i check the taste and smell to see where i hitting at. rub some on your hand thorw out the run smell the chagne. recipe ok lol 30 gals water 3 gal molasse 25lbs sugar 2tsp dap 150 g yeast. i pour the 3 gal molasses in ur fermenter add 2 gals boiling water add sugar and dap to dissolve add 27 gals water mix like hell then i pitch the yeast on top and yet ferment for about a week i start out s.g at 1.090 and end at 1.000 bakers yeast that about the limit you can get with it
