thats perfect temperature--- slower fermentations make for better product.

BTW did you aerate your wash before pitching yeast."

I don't know of any. But then again, I haven't looked. Blushing

Know bread yeast aint any more heat tolerant than da Beddy Daddy..because it was the bread yeast users who finally convinced me my fermenting problems were related to the hot weather and they was right. So no use looking under that particular rock I dont think.

"I did'nt notice where anybody mentioned you could use a swamp cooler to keep your fermenter cool!!!! Very easy and cheap....just a HD or Lowes big bucket and water, then a few frozen water bottles.
Put your fermenter in the jug fill with water and a few frozen water bottles hang a t-shirt or the llike on the fermenter (let it hang in the water) and point a little fan at it and evaporization takes care of the rest. You can get it down to 65-70F if you so desire.Cool"

Thanks for that tip. Now all I got to do is find a bucket big enough to hold the 20 gallon bucket..lol. In the meantime..currently have it chilling under the AC holding just a notch below 80. Any suggestions on ideal temps for the stuff? Should have enough control to make it swing either direction.
