Ok so i have a 15 gal keg with the essential extractor II....my wash/mash is about 13 gal with 13 lbs of sugar and about 5 to 8 pounds of cornmeal and about 4oz of store bought plain active dry yeast....i mixed everything up and put in the yeast at 100 degrees temp like it says on the container it came in then it starts bubbling and does so for 3 or so days and i let it fermit for a week or two and then i distill it in pot still mode and my highest proof was only about 100 proof for the first few jars then the rest was weak and crappy......my question is what am i doing wrong and how do i get my shine up too 170 or 180 proof?.....also im cooking it at 180 temp

"15gal of h2o will need 25lbs sugar, 15-20lbs cracked corn, do not use store bought yaest, you will need a yeast that will be 16-18% tolerant water should be about 86-92 degrees, one week later distill with pro2 and it will be about 160 proof ???

Think Popapino got a good sounding recipe there. Do also vote with him that aint quite enough sugar for that much water. I have had purty good luck with 10 lbs sugar in a 5-6 gal wash or 20 lbs in a ten gallon batch. That be with Distillers yeast. I dont think bread yeast could handle all that much sugar so might be good to shave off a few pounds if bread yeast is what you want to use. Dont think it would hurt it to get it over sugared..but there seems to be some debate on that. Most likely just a waste of sugar. To get some Everclear out of a potstill prob need to water down what you get on the first trip and dilute it down to less than 80 proof..or combine it with you next wash and run it through there one more time yet again. Bet that get you to 160 or better right quick. Keeps us posted on the adventures. Combined with a wash prob not make it that high. Thats a lot of diluting.

ok thats some good info ya'll....about how much yeast would ya'll think for a 15 gal wash?

Taylorboy...use a recipe thats tried and true so you'll build your confidence when it comes out right. There are a few probs with that one, and if you can order some nutrients/enzymes you'll be happier with the finished product..............IMHO."

"I use 1 pack of yeast per 6-7 gals wash. Don`t know if this is too much, but i will get aprox. 1 gal 160 proof per batch.

"Two pinches as can be squeezed between the thumb and index finger is more than plenty. Once pinch should work just about as well. I think some of these folks who add it by the cup prob got some kinda stocks in Fleishmans or something..lol. I normally hit 170 proof each time..cept when pot stilling I only got 120 with a similar wash and volume of product on that experiment. Shortly after that I became a dedicated reflux enthusiast.

there are several in the topics that describe what you are looking for. Rum recipes and Whiskey recipes.
I use a neutral recipe mostly now (its called Gerber babyfood likker) cause I like to add it to everything without the corny background, but thats just me. If you look on the Homedistillers.org website and go to Tried and True recipes its loaded with easy ones to try. Get a pen and paper--then look here and then go there for sure you'll find something you want to try."

Gerber babyfood --its under good clean whiskey

Sweetfeed whiskey -really easy -horse feed and sugar

Any rum is easy - its just sugar and mollasses (if you have it) if you dont just use brown sugar, but you'll need neutrients and enzymes of some kind.
