Oh. I'm fermenting a sugar wash at the moment and didn't know if I should airlock or not. I've had hit and miss luck with fermenting this season. This is the first year i've even considered airlocking. Normally it works fine without one. Thanks.

"Join the hit or miss ferment club. I got one still as sugary as karo syrup chilling out in the hooching shack. Dont think an airlock would make it or break it. I hear of folks going back to the old fashioned technique of throwing a towel over the top of the fermenter and getting good results. I got the 20 gallon Brute which has a lid but not airtight by any means. I been putting a blue recycle garbage back down over the top..thanks to who mentioned that tip..but about decided it aint critical. Think slapping the lid on work about as well. The blessing is Co2 is heavier than air..and will settle to cover the top of the wash/mash to protect it. Only way I can see it getting carried away is opening the lid too much or in breezy conditions..otherwise its gonna stay put where it needs to be. Just my .02 of course. I turn off the AC before checking to see how much sugar it aint eating. Keeps us posted. If you figger out the fermenting dilemma kindly report back so I know what to do with mine. Thanks. As I tell folks..Being retired is highly over rated but it beats the caca out of working..lol. Makes folks hang around the cement pond and drink hooch. "Dang it. Dang it. Dang it. I suck somethin' fierce at sugar washes. Today I acknowledged my 3rd failure to bring a sugar wash to completion. It has sit for 5 days although it quit working after 2 days. It's still sweet to the taste and has a SG of 1.073. It started off working hard for the first 12 hours or so. But by the end of the 2nd day it had quit bubbling altogether. Dang it, I say! I can make sweet feed/sugar washes that ferment great. In fact, that's about the only recipe that works for me. Makes damn good hooch too. But for some reason I can't get the plain sugar wash to work. Here's my method for a 5 gallon mash.... -Boil 2.5 gals spring water in stock pot. -Add 10lbs of sugar & dissolve. -Dissolve 6oz tomato paste in 5 qts of water. -pour water, sugar and tomoato paste into fermenter. -Top off to 5 gals and stir. -When solution is 80F add 1.5oz of rehydrated distiller's yeast. -Add 1 tbsp to DAP & stir. -Cover and airlock. -Keep at 84F. Can anyone see what i'm doing wrong? I've seen lots of recipes and methods for sugar washes. I think i'm doing it about right. But i'm definitley overlooking something. Thanks in advance for your input. And the opportunity to whine. It's theraputic."

Lewis you said it smelled like hound dog...do you know why???? You got greedy and collected down into the tails. some folks here say carbon filtering is nonsense, not me -- glad to hear it worked for ya. Collecting in smaller jars will help you keep the smelly stuff out of the good stuff and you wont need carbon. Zero headaches means no foreshots or heads were in your hooch, good for you. Just something to think about next time. "

Well I have about reached the conclusion them wet hound dawg tails is simply good drinking hooch which aint been allowed to air out long enough yet. Or somebody forgot to use the carbon filter gizmo..or somebody trying to rush the airing out process forget to hold the breath whilst it headed to the tum tum etc. Correct my thinking here. Thanks.

Hey Swill-Billy sorry I must have overlooked this post. Or maybe I answered it in a different way previously. Dang..I must be getting senile or something..lol. Sounds like your on the button technique wise. Just because the brew aint roiling and flatulencing do not mean it aint working. Thats a sign it has turned to its intended purpose of turning sugar water to hooch..it goes into the silent mode. That is where it needs to be locked down tight to protect what slim Co2 it is coughing up. It boils and gurgles when it doing the newly wed thing with other preverted yeastes..or so I heard. Be patient..give it some time to work. Rome wasn't built in a day ya know? Or so my Daddy claimed anyway..lol. They could have knocked it out in a day for all I know..but dont sound real plausible. Would say your wash is doing fine. Best of good fortunes and kindly keeps us posted. Thanks. Wash checker be our best pal on this deal..also if it settles out a bit is a great clue. Seems like Bayou said two weeks on this one. Two weeks works at least for the room temps I was using the times I made it. Which I forget what them temps was right now. Swill-Billy, the only thing I might take a look at is if you brought your first 2.5 gal to boil I am quite certian there was little to no o2 left in it, then you added another 2.5 to bring it up to 5 gal sounding like your little fellers ran out of o2 maybe a bit sooner then they would have liked to. Before you pitch ther next time try and aerate the far outta of it before you pitch. What you think Big?????????"

Sure is a possibility on the lack of air. Cant immediately think of any personal batches which was asphyxiated to death from that particular ailment..but sure could have stunted unbeknownst. Used to not pay much mind to it other than to try to splash around in the liquid as much as possible..which that one prob a hold over from the old beer/wine days..but since hanging out on here and getting slightly edumacated and taking advice from Smart Fellers..I have now become a dedicated aerator. I use the fish bubbler more than the fish ever used it..lol. I think the fine wide spray pattern from the garden hose nozzle while topping it off helps too as do several spankings with the paint stirring apparatus for the cordless drill. That sure beats swiping Mama's hand mixer for the few who maybe aint tried it. Person whup that around starting on bottom and winding up with a whirlpool on top of the liquid bound to give it an extra breath or two. The distillers yeast do not seem to stay crazy active that long..so may be a factor there. After about two days it seems to to quit pharting and sputtering even with plenty of air. Betcha the young man come out with a good ferment. Whutcha think? I prob be willing to bet a big swaller of hooch..lol. Dont feels bad. I got Arkie kin who have to journey to Tejas to find good shine.
