"The last few weeks have seen 100 degree days in the Oklahoma Red River Valley. With 18 gallons of 2nd generation UJSM fermenting in a 20 gallon Brute container it was getting too warm. Solution was to wrap the fermenter with a couple of large beach towels, wet it down, and let evaporation cool it down.

Needless to say I was dumping a gallon of water on it every three to four hours. The fix was to put a 1/4 inch plastic tube in a gallon container and let it siphon onto the top of the fermenter. A screw in the end of the siphon hose laying on top of the fermenter slowed the flow down to a nice steady drip. It gets the job done with 2 refills of the jug a day and maintains the fermenter at 80 - 85 degrees.
