When we started our sugar mash, our Oeschle meter ,with a scale of -10 to 120 was about 103. After 4 days at 76 F the fermentaton is slowing and the Oesc is reading about -09. Is this normal? I know that we rushed some things with too little reading. Our receipe was too sugar rich, 14 lbs brn sugar, 7 lbs white sugar, 30 l and 1 pack of turbo pure 48. How long does it take to settle the wash in order to siphon? Thanks for the help, great site.

Actually, your recipe was not overly rich in sugar. In fact, you likely could have gone a little higher, but the fermentation would have taken slightly longer. Based on your readings, you have about 14% alcohol, which would have normally fermented in 2-3 days, but the larger volume and slightly lower than standard operating temp for the TP48 would have caused the slight time difference. Your final reading is good, and you should be able to clear and move on within the next day.

General rule of thumb is to add 0.0002-0.0003 per every degree F over the calibrated temperature of the meter.
