I just use the tripple scale hydrometer and accept what it says before pitching. I always get my sugar washes to ferment dry also. Thanks for the reply.

I am using an 7.9 gallon bucket for the UJSM I pull 6 +/- gallons from that leaving corn and yeast in the bottom. I after distilling I take 1.5-2 gallons right after unplugging kettle and throw that on my sugar, tomato paste and vitamins, (I don't know if I need paste and multivitamin but it's cheap and makes me and the yeasties happy so I do it) cool with ice and water, then add back to corn & yeast left in bucket. Then stirr like crazy and cover. I always give it at least 2 weeks start to clear, always has good steady results. I have not yet checked PH, my well water has a high PH so I'm guessing it balances with the acidic back set I'm returning....I keep meaning to check but haven'tt yet. I did find I like it better in full reflux mode rather than full column with no water, thats how I did the first 2 runs. For my taste reflux is smoother with a slight corn taste, but thats just my opinion. I learned that from the Motorcycle Forums, Sound, Sight, and here Taste and Smell are all subjective. Very few people like the same thing for the same reason!
