Been meaning to check this local place out so I took the day off yesterday and wife and I picniced at wineries and ended up here:

This fellow has a small winery and hates to throw away any of his juice. As you'll read one trick in making red wine heartier is to bleed of some juice to concentrate the rest; that bled off juice can be made into rose wine. Well, only so much rose is salable, so most places dump it. He took it a step further....he distills it.

Don't know the brand but the still is 60 gal, steam jacket heated and computer controlled ($10K). He can pot distill or open/close some valves to divert to the columns on left to reflux or partition (click on the pic). He makes vodka, gin(triple distilled) and brandy right now and is gearing up to make bourbon out of his own corn. Coming from wine I figured he's get lots of methanol/acetone....he does and saves it for cleaning. Asked him about the hurdles and hoops involved in a pro operation; there are many and heavy oversight/records etc. Interestingly, you have to have an acceptable still on order before ABC will even look at your license app....if they say no you lose hefty $$$ when you cancel still order. Very interesting and and his products are quite tasty (he gave us plenty to taste)...which reminds me, techically distilleries can't have tasting rooms, but because this stuff is made from wine, he can offer tastes

Hi Outland,
There is a similar set up at a local winery in our area. Their still set up looks like a professional version of a still dragon. They were a winery for decades before they got the nice still set up. They have a nice winery tour. It costs a few bucks but you also get free access to their to the tasting room which includes several varieties of the alcohols they make. I never bought any because they charge big mark ups but they did taste good.

Hey Maddawgs,
Yeah, there is a large mark up. Fed tax is $13.20 per 100proof gallon of spirit. Its adjusted for 80 proof spirits. I don't know what state alcohol tax, then sales tax is; but I read somewhere that all taxes are about 78% of what we pay per bottle. Also, taxes are reason that I couldn't taste direct out of the still; what we tasted was from already taxes paid bottles. These guys have almost crushing rules on them and they have to obey, profit margin appears to be low...hence they charge pretty high to cover their nut

Hi Outland,
It was the same at this winery. Still was in a glassed off room from the rest of the winery tour so you could not even go near it, just see it thru the window. Tastings were all from bottled for sale stuff. We usually do the tour at least once a year to get our apples and some wine but we haven't gone yet this year. Thanks for the info on the taxes, I did not know they were that high. It has to be a labor of love as the guy showing us the still had a huge smile on his face. Next time we go I'll have to ask questions and contribute to his tax bill :).

Hi Maddawgs...
This is the official Fed tax schedule on alcohol and tobacco: http://www.ttb.gov/tax_audit/atftaxes.shtml. Note that there is a "credit" if distilled spirits are derived from wine, but I don't know what it is.

I learned about this place from a local newspaper article last year when he was setting the distillery up. I liked that he was being clever and frugal with his excess wine. This is a rural area, everyone is on septic except smack dab close center in the few towns. Apparently dumping huge volumes of excess wine plays havoc with leach fields. The place was actually closed Tuesday and I just asked him if and when there were tours of the distillery; he was kind enough to give us the tour then, even though he was working and sweating, etc. Lotta work as its not a continuous still...do 60 gals, dump, refill, start again. Like you said...labor of love

Hey Outlook,
I just checked out the link you had to the refinery and all I have to say is WOWOhMyGod. That looks to be at least a 10 inch column. Looks like a hulked up version of a hillbilly still. Very very nice. The set up I saw locally was only a 4 inch, all stainless , 8 to 12 sight glass sections, about 8 feet tall with maybe a 50 gal boiler. I could not really tell as the window did not go down to the floor.
