"hey all am just starting distilling (building a pot still). i have some white wine yeast left over from my wine making days, am upgrading to spirits!!

am just wondering could i use white wine yeast for a sour mash? and also normal active bakers yeast makes foul beer but would that tast go away through distilling??

you sure can, as a matter of fact lots of folks use EC-1118 and thats a wine yeast. It works just fine, yeasts only function is to make ethanol. It of course makes by-products that we dont want but we just leave em in the boiler. So once you get going on your stillin get some distillers yeast or just use bakers yeast, its easy to get and works too.

Bakers yeast? bread yeast? Same thing? Is Fleischmans pkt yeast at grocery store the same thing? Thanks for any info.

Hokey,

Fleischmans is bakers/bread yeast. It'll do the job. I get the 2 x 1 lb packages at Sam's ... it's about as cheap as you can get but will still make a fine product.

I've been using the Red Star yeast from the grocery store and works good for me. I also like champagne yeast

Another question cleared up. Thanks for the info. I don't know if we have a Sam's around here but we have something like it I'm sure. Oh, BW I hope your Aunt Myrtle is HOT.
