Scotty have you did a bit of smoking of meat and fish before. If so you will know not to smoke fish in the same smoker you do red meat in. I am getting ready to smoke a bird for thanksgiving. Like it even better the next day. Good luck with the new smoker. Might need to know how to make a atomic buffalo turd.

The oils from smoking fish will get into and stay on the the inside of the smoke box. So after smoking fish the only way to keep things from tasting like fish is to burn the box, or clean with ovencleaner. Ehter way not good. One of the things that makes a great smoker is getting the old smoke built up on the inside. Kind of like a old cast iron pan.
