I've read some do 35% down to 20% then stop

You need to state your desired outcome - pot or reflux. Neutrals hearts come off at 92%+ if refluxing. Pot stilling is different & I don't do that except for stripping runs & then I don't care about ABV.

My Air still (pot still) has been starting at 68% after discarding heads. I stop at 40%. Then save from 40% down to 20% as tails. Right or not I am not sure. I am still reading experimenting.

You can run tails as deep as you want, the product will be run through again anyway.
