I have 5gal plastic carboys that I am making my wash in and I am trying to get the most out of each carboy. I'm using 8lbs sugar, 5lbs corn meal, 3.5 gallons water, 2 packets of Red Star active dry yeast. I wasnt sure if the yeast would be enough to do the job or not?

Well if you have 5 gallon carboys why not make a 4.75 gallon wash?? 2 pkgs of that yeast should do the job. Give it 10 days and check FG and see if its done. 5 lbs of meal sounds like alot but if you like the taste thats all that matters. The sugar is really your likker and the meal is some nutes for the yeast and flavor. Not sure what - JOB -- you want it to do. Yeast makes alcohol and it should do fine."

I just wanted to make sure the amount of yeast I used would be enough to convert all of the sugar to alcohol
