When running for the first time do you run it fast then when you run a second time run it slow?

If you're stripping a wash with your pot still you can run it hard and fast since all you're trying to do is reduce the volume.
I'm assuming that your ""second time"" is your spirit run. Your collection rate will depend on what you're trying to accomplish ... but it will be slower than a stripping run.
What are you making?

This is all totally new to me so I need alot of help. My wash consists of 2.5gallons water, 4lbs sugar, 2.5lbs cornmeal, and 2 packets of yeast. Once I pour the wash into my distiller do I need to heat it for awhile before I start running the cold water through my tower Once I do start do I start off slow and gradually increase the amout of water? Also how much finished product should I be able to get out of this?

I would only use one pack of yeast for such a small wash. Also your system doesn't run water to the tower, it runs it only to the condensor. Run full water to the condensor at all times. No need to control the flow. 2.5 gallons is 10 quarts. If you made a 10% wash that would be one quart of alcohol. You will never get all the alcohol out. You might get as much as a pint of lower abv keepers.

Just got my hydrometer and alcoholmeter! Checked my wash and its 0.992! So I should be good to run after it clears for a day or so? Just leave outside for the night as long as its not going to freeze to let it clear? Can I put the cap back on my carboy or should I just go ahead and leave my airlock on?

My sugar washes are never ""crystal"" clear. They're more ""translucent"" ... sort of like the original Gatorade. I don't use any finings ... I just rack to a secondary bucket which goes in the garage or basement, depending on the season. The primary gets put right back into service. By the time I get a chance to run the wash in the secondary it's ""clear"" ... usually a week or less."
