TM, I'm sorta new at this too, but from what I've read, spring water was what all the ole'tyme moonshiners used,,mainly cause that was all that was available back up in them thar mountains, but, it would really probably depend on where you are geographicaly located. What kind of water is generally found in your area, hard, calcium, sulphur, etc? It follows that distilled water may be safer, but it may also lack some local mineral that ,could, actually enhance your liquor as with some springs. I think that if you live in a city where you draw from their 'treated supply', you may want to give the distilled H2O a shot. Where I live, I use water from my 185 feet deep well, and GENERALLY it is OK. However, at certain times of the year it's not as good for cutting whiskey. Try whatever you have readily available in a small glass of yer beverage and judge for yerself!

I have a Pur filter on my brewroom faucet and filter my own water. This removes everything out of the local tap. I have used this in all my wine and beer brewing and I have had excellent wines and beer. Might want to give it a try. Very inexpensive and always available.

Distilled water is the only way to go. You distill your mash to separate the alcohol remove impurities, why would you chance ruining it with anything but pure, distilled water? Seems to me it's a no brainer, distilled is distilled is distilled.

Thanks for yer reply standz, I always appreciate reading your opinions and suggestions. I guess I thought TM was only talking about making 'cuts' to high proof liquor. I would certainly agree that with distilled water you wouldn't introduce ANY additional flavor, so you probably wouldn't get anything other than just the taste of alcohol, and that may not be a bad goal at all! When I said that 'some' springs produce certain desirable ,minerials, flavors, I also cautioned that your particular geographic location should be considered. Just as with 'Scotch' and other unique flavoerd liquors, the environment ,water, wood, etc., can be used to enhance the final product. And again, it would depend on an individuals particular tastes, wouldn't you agree? It surely would be safer to use distiled water, not even to mention microbes and other possible pathogens in most well water ,and even many municiple water systems,. Maybe it is a no brainer after all, but as I said, In my particular case, my well provides me with pretty good ,notice the qualifying 'pretty good', water, so I have and will continue to use my well water when making cuts. However, I wuldn't recommend this cart blanche with wine or beer, but thats a whole different line of discussion. And while I'm certainly no expert ,actually I 'sitll' ,,pun intended,, consider myself a mere 'babe' when it comes to this hobby,. I'm quite happy with the reception my 'beverages' get though. And I only suggest one try what you have available first ,with a SMALL AMOUNT of liquor, to see what you get. I surely would't risk a whole run without first verifying the outcome!
Thanks and keep it coming,
Spiritmker ,but Certainly not a master,

Standtz and TM, take a look the next thread 'Cloudy after cutting'. I concede standtz, this is another reason for sticking to ,true, distilled water!

I guess that since distill water is only about 58 cents a gallon taking a chance with some other source is just not worth the gamble. I will stick with suggestions and only use distilled water.

thanks for the help, I live near the rocky mountains and this is where they draw the water from, it is bottled spring water, so I think that this is what I use to make my spirit so i am going to try and make all my cuts with it.
thank you for all the advice, you can't learn unless you ask and there are different opinions, thanks again.
