Got 8 gal reflux once reached 73-75*c it takes 3 hr to get 1 cup of product it's probably 180 but why is it taking so long and suggestions

You should be at about 78* C to 80* C to get a good run speed and purity IMO.

Thought if it got to hot it would burn the bran? Do I just need to set it at 76 or so and let it ride till it peaks as tails out? By the way thanks for the help

"set nothing- soon as the head temp starts to rise, turn on your cooling water at a slow rate. look for a luke warm output on the water. lower your heat and as soon as the alcohol emerges, keep the heat low enough to just get a fast drip. control the drip with your heat only, not the cooling water-- the head temperature will rise slowly, depending which alcohols are emerging. The alcohol controlls the head temp..
1--just enough cooling water for luke warm return 2-- minimum heat to control the drip. 3--Stop collecting when head temp is about 205----about , maybe a little more

My pot that holds my mash can I heat it too fast or do I need to continue to heat it low and slow?

No take it up as fast as possible....then adjust the heat to get the drip you are after. But remember when its on its way up it can get away form you pretty quick. Its not the end of the world if it does but keep an eye on it so you can adjust it to that just right temp."

I thought we were supposed to filter out the solids before distilling. I know the "Moonshiners" show showed them fermenting and distilling in the same submarine pot, but they produced a lesser grade of product. We have loftier aspirations! :)

No sir I screned the solids out of the mash all that is in the cooker is wash no solids.

Ran last night heated up fast had about 65 drips a min good smell at first then went to sour smell and went weak and semi cloudy and tasted sour think my heat got a little high I also kept my water flow down and the output water temp was Luke warm guess I need to do a little more research.

65 drops a min is a nice and very slow run but be more specific about how long/much between flavor changes

Length change was probably about 20 min after run started it had a stout alcohol smell then went to a sour smell and run turned dingey I then changed jars and started a fresh jar and let it run for 10 min and checked it and it had better color but still a weak smell and it would not burn either then being discouraged I shut it down to gain more info on what I was doing wrong also it had a sour taste almost like a green apple sour taste wicked H makes no sence cause my wash is peach.

Hey Dirtdobber17, I hope this helps you some. When I filter my mash I run through three different filters, first a strainer then I gradually run it finer and finally run it through a cloth just to make sure there are no solids. Solids will give your shine a bad aroma and taste. As for the heat I run it full blast with a propane burner keeping my hand on the pot and the condensing pipe making sure the heat hasn't gone up too much. Keeping your hearing on edge and waiting for the that wash to just start boiling and keeping my hand right near my condencer, as soon as I feel the heat coming I'll lower the heat to a bare minimum and I've always gotten great results , no stream but just enough droplets. I hope this helps.
