"I ordered some heavy char oak chips for aging, and have been reading this forum, and am not sure what is meant by the term ""a few"".
Can anyone give any suggestions/guidence on how many chips per quart and a ball park amount of time to achieve a fairly good end result when using chips?"

I used some heavy char chips and over did it. It tasted smokey after and I had to distill again. I moved to a palm full of Jack Daniels oak barrel chips and I have a much better result in a quart jar. If you use the chips you bought start with a table spoon full and you can always add more. Hard to undo. I like to move it from the freezer for a day or two and then to the counter for the rest of the week. I do that for several weeks and then put it away for a few months. It simulates the seasons. I have aged them 30 days, 60 days, ect. It is good at 30 and better at 90. Trial and error makes it half the fun.

JB, I have aged at 50% and 60% abv. I do not think there was a lot of difference but if I had to pick one I would say te 60%abv moved along faster and picked up a bit more flavor. I brought the 60% back down to 50% when bottled. The calculators found on sites like Brewhaus and Hillbilly Stills help get the % close before I start to measure.

Thank you, that sounds like it should get me in the ball park. Time to play with it now that I have a starting point! I was concerned with over doing it.

What kind of oak chips can I use? Can I not just use oak chips from left over wood work I do? And how would/can I clean them?
