I'm new here and have a question about the fermentation process. How long can fermented mash be held before it is distilled? I currently make wine and know how long I can keep fermented wine before I bottle it. Also, are there any special care points that I should be aware of if I have to wait a week or two before distilling?

i also do wine-- after clearing, i treat mine just like a wine if i intend to store it--works great.. sorbate and sulfite
