"howdy all. long time no post.
First off i have a question about my dunder. i have about 1.5 gal of dunder i have been leting it due its own thing. It has been in a sealed bucket with an airlock for almost 2 months. 4 days ago it was smelling perty fine with a nice white mold cap covering it. I checked on it this morning and it has been infested with green mold. it seems like the green stuff is growing out of the center of each white colony. And now it smells less appetizing, finishes with a dirt smell. i am about to start a new wash and was hoping to use some. I figure i should skim off the molds and boil it before introducing it to my wash. I have herd on here that this is fine to do, but I am just wanting feedback from someone who has done the same thing, and what they have found. The green stuff scares me just a scotche.
that being said i know i have come across reading similar stories on multiple forums. but to my recollection i only remember people talking about still using it, and i cant remember any posts of results of doing this.
Also im looking for a tride and true straight molasses rum recipe. I have 5 gal of food grade no preservative molasses.
yeast 2-4lb brown sugar 1gal molasses H2O for 5 gal total volume
^seems to be a popular simple rum recipe on these forums(varying a little)
im thinking about
yeast 1.25-1.75 gal molasses 1 gal dunder H2O for 6 gal total volume
^ any thoughts questions, comments, or concerns? All feedback is wanted.
thanks guys"

Hi Gibbs, I'm a little leary of useing moldy dunder, mold usually leaves a flavor in what ever it grown in. Kind of like the smell you described.
Also I would add 6 to 8 pounds of brown sugar to your recipee and only use 1 gallon of molassis.
You can freeze your dunder so it doesn't mold for reuse later.

You may be right, I have'nt used a moldy dunder. Try it out and let us know how it turns out. But do add some brown sugar to the wash for a better alcohol content.
