"Hey all,

Greetings from Old San Francisco. I'm just getting my beak wet in this distillation thing. I've been Homebrewing for a little more than a year, I love it & the great All Grain beers I've been making. A friend recently gave me a bit of the rum & gin he's been producing with an Essential Extractor PSII & this has gotten me to start saving up for a still that I hope to purchase in a couple months.

I figure I'm off to a decent start with the experience I've gained mashing & brewing all grain, as well as already having the mash-side equipment as well as a few 5 & 6 gallon glass carboys for fermenting. Exciting times! Just been browsing the forums here & really learning a lot from what members have shared here. Hoping to be an active member in this here community and to be enjoying and sharing the fruits of my labor relatively soon.

Welcome to the forum, there lots of good people here willing to help you out, just ask and someone will give an answer and there lots of good information to read about and learn... I am not to far from you here in Sonoma, I have been helping a friend brew some home brew for the the past year and I decided to take the step a jump into this hobby. I've been reading and learning for the past couple a months and just ordered the EE PSII HC with the 15gal kettle last week.

I'm sure your homebrew experience will come in very handy, indeed! I might be asking you for some help along those lines ... my efficiencies are still in the dirt! Sad

Barbary Coast?...I retired as an Ironworker from the Bay of St. Francis, sailing off in the Pyrate Ship known as Royaliste out of Sausalito in 2005....I prefer a pot still for taste (I live by an ethanol plant so why compete?)..read up and enjoy, matey.............

Thanks for the warm welcome all! Definitely spending my time reading & re-reading.

captinjack, let me know what you think of that EE PSII HC when you're up & running with it. That's the still I'm looking to possibly get, if I don't go the DIY route.

JB, any question you might have with regard to brewing, I'd be happy to help out if I have some answers or advice. What is your efficiency looking like these days? I've seen a lot of issues with efficiency due to improper grain crush and/or mash temperature issues...that's where I'd start my assessment on your system

I think you're probably spot-on. I don't have a grain mill so I have the lads at my LHBS do the crushing for me. I never asked them what the setting was, but I did note that it seemed to be more coarse than I would have expected. Plus I'm still pretty green with AG to begin with ... so I need more practice (read: there are plenty of beginner mistakes left to be made).

For the time being, I've been working exclusively with rice and the powdered enzymes. Now this I can handle. It's taken a while to develop a good process ... and learn that all rice is not created equal. :) With off-the-shelf medium grain rice I can now routinely get 30 - 32 points per pound. I'll probably return to the barley and oats in the spring. The cold weather is ideal for clearing the rice washes so I'll be taking advantage of that for a little longer.
