I've got an under sink filter installed so my kitchen water is tasteless and odorless. Not so the rest of the house. I use the kitchen water in the fermenter and make my cuts with distilled water out of my tabletop water distiller. Dunno if it would be cheaper to buy distilled water for the cuts or not, the distiller is expensive to run and I see it in my power bill, but it sure is convenient.

wow - I just realized (thx to Fritz's post) - I already have a activated charcoal filter supplying water I can tap off of !
I installed a resturant grade autofilling Bunn coffee machine in my house a few years back and I "T" spliced off the icemaker line and ran that thru a replaceable inline carbon activated filter (from Home Creepo), and then into the back of the coffee maker's water input line.. I can simply add a "T" there and then draw off what I need - yea, with that small arse line it'll take a while, but who cares, it's free! I test that sucker with a TDS meter on occasion to check the filter so I know it's really clean coming out.

I tried rain water for ferments, i wasnt impressed with how it fermented, it seemed to go slow and i had to re-pitch to complete. For ferments now i just use tap water out of the water hose, I been using the birdwatcher recipe from BR, which has tomato paste, for an acid.
As far as cuts go, I started with distilled water, then ran out one time and finished with tap water from kitchen, which has a charcoal filter. My buddy who had sampled my wares before came over and tried the kitchen water cut neutral and told me i'd been keeping the good stuff from him! I tried them both and the kitchen water cut definately taste better than the distilled, for whatever reason.
Then i read on here about the chlorine and how it evaporates, so i started drawing up a cpl gals of charcoal filtered water and letting it breathe a few days; you can see the bubbles on the side which i guess is the chlorine as it converts back to a gas. Anyway, i've been doing that for a while, and its what i prefer. I plan on using some well water sometime, but havent yet.

Gotta be careful not to air it out too long. it can pick up nasties from the air just as easy as it can give up the chlorine. including living nasties. I imagine the charcoal filter pretty much removes all the chlorine anyway, mine seems to, there's not hint of it in the taste or the smell.
Gonna try cutting my next batch with filtered tap water and see if I can tell a difference.

oK....Used tap water, fermenting was at a snails pace. I added a little more yeast(maybe i should not have) but did not help....going back to distilled water....costly, but i get more product. Im not a very patient man.

I've been collecting maple sap for surup, and I've been thinking about trying that for distillin. What do you think

In all seriousness, I use tap water. Boil whatever I need for the grain or sugar then use the garden hose to dilute, aerate, and cool to pitching temperature.
If I have a beer that the yeast quit before it consumed all the sugar, I use the dunder from the boiler to re-use the leftover sugar. You gotta adjust the PH first though.

Most of your bottled water is simply City water, I think Houston Tx started that trend, for me I have the best tasting well water I've ever found, nothing from Walley World can come close. I have about 60 gal per minute coming in and supply both my children and their families plus my shop. Water to waste, wish I could share it with you.Oh yea ph7
