ace of 2 Metabisulfite is used in wine to keep the wine from oxidizing or spoilage, however metabisulfite will evaporate in oxygen. Metabisulfite is not stable in oxygen and if you are going to use the container right away than this product is fine but if you plan on cleaning then storing the container this is not a good product to use. You can use a cap of household bleach in a gallon of water than rinse 3 times with clean tap water. I perfer star san which I have found to take the aromas away and will not evaporate. I have cleaned containers and stored then with no aromas after storage. To clean you still you can use diluted vinagar or citric acid diluted in tap water. I think the citric acid is 1 tablespoon to a gallon of water. This is what I use and it has done a great job for me. I have also used the star san with great results, but I always rinse even though I am told that I do not.
