help, was going to make a johnnie walker style scotch, so off i went to the brewshop, was told to get french oak chips and still spirits classic premium whisky. As i've done wood chips before, i asked the guy if the same method as making wild turkey and jack daniels, like 50gms of wood chips to 2lt for 10 days... his reply was 'yes the same' so off i went, put 50gms of chips to just over 2lt of 40%, and left it. after not less then 3 hours, it starts to turn a red. went to work and came home and fuc*, it only been 12 hours or so and it's turned a dark red to almost black colour. so i read the packet, put 5-15gm per 1lt into muslin ??? put bag into wine for 1-3 days during fermentation??? What the hell!!! Now i've got 2lt of almost black smells like french oak stuff, what do i do??? do i add shi* loads more grog to delute it down??? or is that the way it's ment to be????

maybe i'll carbon filter half of the 2 lt to make it weak......... a waste of carbon......

ace of 2, I have found in my experiences that some people at brew shops do not know what they are talking about. Oak goes a long way and I always start with a very small amount and increase as I feel is needed. I buy oak chuncks/nuggets, I only add one or two then add more if I feel they are needed.
