I made 2 runs of sweet feed moonshine...whille they fermented , the air lock was bubbling good for about 4-5 days then tapered fairly quick. Now I'm making my first batch of sour mash. This thing is still perking pretty good at day 8 1/2. I was planning on running it today, but I guess I need to wait, right?

I would wait until it stops bubbling or slows down. If it's still working then there's still sugar in the wash that the yeast is still eating. Don't be in any hurry and let it work.

Thanks johnnyapplepie .One other question. Today was my day off ,but I won't be off for 6 more days. How long can I keep the wash in the 'fermenter' before it will go bad???

Hi Ikammer, if it's not finished working leave it alone and don't open it. Once it stops working it will need a couple of days to settle and then rack it off the solids, traub, and let it settle out another day or more. Sounds like your next day off should be about right.

Traub is the solids at the bottom of the fermenter, grains, yeast, and anything else that is solid. You don't want to leave your beer sitting on it any longer than it has to for fermentation. It can cause off flavors to develop if left to long. When your beer is siphoned into another container to settle the rest of the yeast will settle out, mostly. Does'nt have to be completely clear, like water, before you run, but as translucent as it will get is best.

Thanks again . One more question .Should the wash be as clear in a sourmash as it is with sweet feed wash??

Like Bushy said It can sit for a while no problems. sometimes mine will work for up to a month then i'll rack it off into another bucket and let it sit another week or two. It wont be clear as water but it will be smell strong like wine and there won't be any solids in it. Be patient.
