I"m a bit of a newbie when it comes to fermenting anything besides a simple sugar wash. The turbo yeast I use doesn"t have much useful info on the back of the packet. Any idea what"s the ideal temperature I should try and maintain to keep my yeast happy and active while still giving it access to more complex sugars?

I keep my yeast at 72 degrees, some of the turbos and go at higher tempertures. You can always go on an internet site and look at the one you have and it will give you a range of temperatures that will make that yeast so happy that it will ferment very quickly.

Help, I am currently making a sugar wash with 42 liters of water, 35 lbs sugar and 2 pack of liquor quick super x-press. Recently on a trip to mississippi i stopped at a home brew supply store and got a lb of crosby and baker super start distillers yeast. My question is how much of the super start should I use to make to same sugar wash, as one pound makes 1000 gallons. I realize I have to add nutrients just need to know how much super start to add. thanks, msmike

Mississippi: You made me think on this one. Hmmm. The way I fugure this, to make 11 gallons of hooch you would need to take 16 oz the super yeast divided by 1000 gallons which give you .016 then multiply that times 11 and you get .176 of an oz of yeast. One teaspoon = .166 of an oz. Therefore, I would think that about a teaspoon with a pinch more ought to do the trick. Of course I could be completely wrong! What do the rest of you think? Call me crazy, I love questions like this!!

Elricko, thanks for the info, I will try it in the morning next to a wash that I just started, keeping everything, the same, temp location, etc. plus I am guessing a few ounces of nutrients, will keep posted, guess I have to make a bigger boiler to increase production and use up the yeast. mississippi mike now pennsylvania mike

I bet you're missing Mississippi tonight! We're just south of you and are getting 6' of snow tonight. That's on top of the 2' we got yesterday. By the way I am originally from Pascagoula. Two guys from Mississippi who make moonshine...who would have thunk it! Cheers
