"I live in a very hot part of the country and keeping mash outside is impossible this time of the year and we try to keep the indoor temp. around 80F. Am I correct that fermenting at that temp. is a little too warm and that it would adversely affect the outcome of the hooch??
The last batch I made was in Dec. and out in the shop I was able to maintain a good constant temp. of about 70F. I"d really like to be fermenting right now but I don"t want to waste my time if the product turns out inferior."

"SS, In my opinion that is a little too warm but it might not be the worst either depending on your yeast selection. It easy to keep it on the cooler side since your gonna keep inside anyway you could wrap a wet towel around your fermenter and blow a fan across it or maybe put it in something big enough to hold the fermenter and some water and then you could just drop a frozen water bottle in there everso often. Some yeast dont mind 80F but in my opinion dont let it get ANY warmer.
Its not the end of the world but cooler is better. Go ahead and try it with whatever yeast you have and you'll know for sure next time."

I like the cooler fermentation but 80 is far from the worst-- my ac is set to 80F and I have often fermented at that temp. Just run it slowly.

I have my ac on 82(can't afford to keep it cooler,Scotty you must have big bucks haha) but put fermenter in spare bathtub with a few inches of water in it and the evaporation seems to keep it cooler

Try less square feet lol 900 sq ft
