Hello Kane, Cook the apples, mash them up, dissolve sugar, honey, molasses and top off to 8 gals? Then add yeast when 85 or 90 degrees?

Did it make much apple flavor in the finished product?? How did you still it? Did you smash and pulverize the apples before fermentation? 8 lbs of sugar should have made several qts of keepers after the cuts were made! Oh and why on earth would you use rain water???????"

used rain water because the Indians recipe i seen / i boiled it first yes it has a nice apple flavor i just cut up the apples cores and all, simmered them for a hour, then added the sugar, honey and molasses, cinnamon and nutmeg, let it cool over night it was hard not to drink right then lol it was still over a hundred in the morning, added the cleaned rain water to pitching temp ,let it sit two weeks fermented right up to 20 p then i got my electric heater with the temp controller nice unit from mile high , but it kicked it out so hot it evaporated / steamed away 3 gallons out of a 8 gallon wash and only yielded a gallon 100 p so trying it again on the re run , sugared it again nothing else and will wait 30 days for the next run and i will watch that electric heater closely and shut it off early so it dont overheat it again and back to my regular heat source the stove lol its great for heat up 8 gallons was running in a hour and ten min / plus steaming lol hope that covers everything oh and i sliced up some apple slices and dropped those in the gallon to add even more apple flavor very palatable

"So after all is said and done - you captured 1 gallon of 100 proof out of 5 gallons of wash? ( you said 3 gallons evaporated )
You said - sugared it again nothing else...does that mean you sugared the backset and then re-fermented it??
You said it evaporated lots of you goodies....dont you use a candenser on your still???
8 gallons on your stove - wow I bet thats a load!!!!
Anyway good luck and hopefully you'll get all the bugs worked out and make it all come together."

problem ? No problem...just thinking into what you typed I guess. If you steamed away 3 gallons of your wash that would make ME think you have no way of condensing your distillate. But if it works for you then cool. And as to the restart..I have heard of others that add sugar back to the slop or backset and referment it and they say it does work a few more times then the ph gets to high for healthy yeast. Now most folks use 25% backset (whats left in your still after distillation) in the next wash and call that the next generation. It just sounded like alot of captured hooch form a 5 gallon run -- my thinking was no cuts were made, but if its good to you thats all that matters. So no worries and happy hoochin."

10/4 yea i was just generalizing the amounts as i do that anyways / just round everything off I / didnt measure it i just guesstimated and yea the electric heater was way to hot the distlit was even hot as i said it was dripping and steaming 8 gallon wash 10 % abv and i only got a gallon so the rest went into lala land i was thinking at least 1.5 gallons on a single run oh well like i said i know now to be carefuller with that thing , and just use it as a extra heat source for start up .

I'd like to try your recipe. What kind of yeast did you use?
