I have run a couple small rum recipes in a 6qt pressure cooker on the stove all went well, just built a 62qt stainless steel cooker, got 15gals fermenting will be ready in two days. I know my temp how long will it take to get that 62qt up to proper temp? alittle nervous my first big cook

"There is no possible way anyone could answer that question with any accuracy...we have no idea what your using to heat with or cook with.

Do yourself a favor and only add 5 gallons of wash at a time....run that and make your collections. A 5 gallon run should take 5-6 hours if its run properly and after that if you still have time left in the day clean out the boiler and add another 5-7 and start over. In my opinion a 15 gallon cook for the first one is gonna be a killer."
