I want to add my amylase to the fermenting mash. Got it to late to put in while heating up the corn meal mash. Will it do any good to add it now at 75 deg F? I'm still bubbling.

alpha amylase is added at 155 f and keep the temp between 150 and 160 for it work

Hey Pirate,

It depends on what amylase that you are talking about.

Alpha-amylase is typically bacterial alpha-amylase that is used in the medium temperature ranges of 140 - 165 F. It will not work well at low temperatures.

Glucoaymase aka Amyloglucosidase aka Beano is a fungal enzyme that can work at low temperatures to continue breaking down large sugars or starch into fermentable glucose. However it will work very slowly, and it is not recommended to use this enzyme alone to break down starch.

Beta-amylase is most characteristically found in malted grain, and is used to produce maltose sugars from starch. Highly doubt you could find this enzyme on the home brew or home distilling market, but malt is easy enough to get...

Regardless, the SEBamyl-GL (glucoamylase) works wonders. Along with that, if you want some alpha for higher temps you can get SEBStar-HTL as it works well above the gelatinization temps of most grains we use. If you use the two correctly, they'll produce plenty of food for your yeast."

Indeed it is John! I should really look these things up ahead of time...

LOL. Don't worry about that! If you were paying me I'd be posting the names several times a day. BigGrin

The bottom line is that there are very few commercial enzyme products that hobbyists in the USA can get their hands on. And fewer products that have accessible data sheets. I've used the enzymes from Rick (BA-100/GA-100) and I've also used the (SEBstar/SEBamyl) enzymes that Pint offers ... and had good success with both of them. I've also used those mystery enzymes from the LHBS ... they made me feel like I was driving blind.

And besides, if Rick thinks I'm stepping out of line, he won't be shy about giving me a smack ... I know this from experience! Blushing
