"Got my first wash running through my new distillation device.
Seems to be coming out well and it tastes like rum and even smells like it. But really strong smelling rum. BigGrin
Got another wash to run tomorrow and will put down 2 gen two washes that should be ready to run next weekend.
Won't too long before I have enough to do a spirit run. BigGrin

What wash are you running that tastes like rum? My neutral wash really has no taste neither through stip or spirit."

It's a molasses wash cczero.

for a 25L fermenter

3kg Dark Brown Sugar
3L Molasses
100gms Bakers Yeast
1tsp Yeast Nutrients
1tsp Lemon Juice

I'll a little confused. If you have the taste you're after after the stripping run, why are you taking it to the spirit run? Won't the spirit run remove the taste you're trying for? I do sugar washes only, not trying for flavor, but have read that taking a stripping to the reflux actually removes all the flavor. Maybe I'm wrong but that's what I've read on this forum."

The spirit run will be made with multi generational washes.
This run is 1st gen, the next wash is made using left over wash from the boiler as well as the left over dregs from the fermenter, the following washes are made the same way. Each generation enhances the flavour of the spirit. When you have 4 or 5 generations stripped you add the strip together in the boiler dilute to 40% and run it nice and slow while making your cuts. Adding the generations together makes for a tastier fuller bodied rum. Once you have made your cuts age it on oak until it's the way you want it.

I'm drinking a glass of this stuff right now and you can tell it will be very good when the final product is made.
Right now being so young it's a little harsh tasting and while it smells like rum it's a little over powering.

Since I'm running in pot still mode it does not strip the flavour like it would in reflux mode.
One run in reflux mode is like running 6-8 times in pot still mode which is why the flavour is removed.

Hi cczero I would assume that Drifter is not going to use the reflux cooling part of the still and just run in pot mode like the stripping run but slower. That should keep most of the flavor."

Then it can sit undisturbed on oak for 6 weeks while I'm enjoying my much needed vacation in Florida.

"Drifter, something that I found that might be helpfull......instead of putting oak on a one gallon jug of hooch, try adding oak to half pint jars, like 10 or 12 of them (whatever division works for you) then after a specified time span you can add more or less and mix and match those little ones to get that blended aspect. Thats how most if not all likker manufacturers do it anyway. I found the results to be more user friendly that way. Again you can always blend the results, just something to ponder.
Oak has a way of getting over powering pretty quick and in my case it turned out pretty shitty until I employed the smaller jar and blending method."

That's a good idea Heeler, I just put 23 pts of Rye Bread Rye on oak. I think I'll take it out of a couple jars. Then leave a little in some others. Then a little more in each as I go down the line. Is that the idea?

That's the plan Heeler.
I have a bunch of 1.5L mason jars for aging as well as a ton of 250ml jars when I do my spirit run.
Think I need more 1.6L jars though. Wink
I seem to be accumulating stripped alcohol for some reason. RollEyes
