Well, I just got my PSII HC a few weeks ago. After a little research, I made a few sugar wash runs that came out nice at around 92 ABV. Trying my hand at a potato vodka now since my neighbor is a potato farmer and he gives them to me. Anyone else from the Portland Area? Thanks for the great site guys, I will let you know how the potato vodka turns out.

welcome gunny ! Would be interested in how the potato vodka turns out. How are you going to convert the starches to fermentable sugar ?

I did some reading about that. The one answer i kept finding was to drop three or four crushed beano tablets in the mash. Apparently, it has an enzyme in it that converts the starch into sugars. I am not sure if this will work or not, but I am trying it now. I will keep you posted.

Beano has alpha galactosidase which is an enzyme that breaks complex sugars into simple sugars. It is used mainly for a yeast nutrient. I don't think it will break down starch. I think you'll need an amylase enzyme. I think somewhere Scotty posted something about it. maybe he could chime in

Thanks Diesel. I was starting to wonder why it wasn't bubbling yet. Is the amylase enzyme something I should be able to find at my local brew store? Looks like i may need to visit the neighbor again soon for a new batch of potatoes.

yes you prolly could find it there,but since you're new to this I would suggest one of the tried and true recipes to start off with where things won't be so overwhelming and you'll come out with some success

Probably not a bad idea. Thanks again Diesel, is there any recipes that you are fond of that will be pretty easy for a beginner like myself? I will be happy to take all the advice you guys want to give.

The gerber or ujssm or easy. Here's the ujssm http://wiki.homedistille..._Simple_Sour_Mash_Method makes a good sipping whiskey after a few weeks on oak as does the gerber

Welcome gunny, if you are looking for a neutral liquor (vodka) try the simple sugar wash posted by Heeler in the recipe section of this forum. I've got the same still and am having a blast with it. Lot's of great recipes here and on HD. Good luck and have fun.
