I have a 12 quart stainless pot still that I made frome a Wal Mart $10 pot. On my experimental runs I used a modified tea kettle. On the tea kettle I could set the stove top to 2 on the knob and in about 20 minutes it would start producing. Do I need to do the same thing on the bigger pot or do I turn up the heat to get it going faster and then turn it back down? If I set it to 2 and wait it doesn't produce till after an hour or so.

more volume will take longer to bring up to temp. for a given heat, if you have the ability to increase the heat then do so if your trying to get it up to temp fast. if not then just set the temp and wait to the volume comes up to temp. I usually run my unit up to temp at a moderate rate and cut it back. I find it easier to settle on the temp zone I like to run at doing it that way. So essentially if you have time run it slow, if not run it up fast and cut it back.
