Was at an informal gathering with some friends as well as new acquaintances on Friday evening. This was an outdoor, on the deck over looking the water summer gathering here in Northern Canada. I brought along a bottle of my first batch of rum that was aged on oak chips for 3 months before cutting to 40% and bottling. I passed the jug around and every last one of the people at the gathering thought it was as good or better than store bought!!!! The second 1/2 of that 1st batch has been aging for 6 months now and will get bottled during the first week of September and I expect it to be even better (I take a taste every now and then and it's awesome!!!!!). Pretty happy that my first batch came out so good. It can only get better with practice.

That is pretty much what I do too. The stuff I aged on charred apple and oak turned out very good. Try putting your Liquor in the freezer for a day when out in room temp for a day for a couple of weeks. It ages quickly and very nice
