tried a new wash

4 lbs sugar
4 gal water
1 quart mollassas
1 pack (5g) EC 1118 yeast

cooled to 80 F
stirred to air
pitched yeast after mixing with sugar water and rising about 15 minuites

After 4 days no bubbles

Added another 5 grams EC118

24 hours later still nothing

any guesses

It could be so many things but that wash sounds like it's missing a few essential items like yeast nutrients for one. Also enzymes for conversion and fermentation. Try a recipe that's already proven.

Thanks Heeler,

I didn't add enzymes because the mash is essencially all sugar so I didn't think there was anything to break down like a corn or rye mash. Is it too late to add nutrients or should I just throw the batch away. Was thinking of adding some wheat germ. I could also throw in some turbo yeast, I've been using turbo for a while but it leaves a taste I was trying to get rid of. This was my first try with EC 1118.

Was about to toss the wash but gave it a good smell and decided to check the SG turned out 15 Percent. Don't know how that happened without any bubbles, double checked my pail for leaks and it appears sealed. Guess alls well that ends well. Going to give it a few more days and distill. Will let you know if I find out why.

If your hydrometer reads 15%, that means 15% potential alcohol, not the alcohol existing in the wash. In other words, from this point there is approximately 15% alcohol available if you get a complete fermentation.

Yeast requires several nutrients, minerals, and vitamins in order to do its job, even if you have only a simple sugar wash.

By chance, the water source was... ? No chlorine or fluoride in it? with such a simple wash, very few reasons it wouldn't at least start....w/o nutients, it would certainly falter, but at least it would start.

Was the EC1118 fairly fresh, or old? Did you culture start it or just pitch? I have done a small starter in a sterile bowl with a small amount of the wash if I think the yeast is aged, or a non-performer...

Yeast was new exp 2/2018, Water was well....Florida tap water run through a zero filter, should have been Ok. I started the yeast for about 15 minuites in sugar water and it did about double so I'm sure it was alive when I pitched it both times. As I said it has the smell of fermented rum guess we will see.

Admin,

Did I do this wrong? 1.10 start SG.... .99 end SG...=14.44.
I thought this was the content at the time. Is it just potential?
Should have paid more attention in chemistry class in school I guess

Ok, next question.. Did you taste it?? Yes, I do mean that, take a spoonful and taste it - If sweet, there's sugar left.. If it tastes sour as hell, thar ain' no sugars left - What was your final gravity (FG) - SG is the before, and FG is the After - There's a calc you go thru to determine "potential" etoh content


You see, we say potential, because there are different extraction methods that deliver different proportions/factions - For instance a stripping run is far different that a spirit run.

Ahhhh, so there's a clue....you said "I've been using Turbo for a while" in a turbo yeast it already has all the nutrients and enzymes so you never HAD to add them. But with the recipe you described that yeast would have to work a little harder to complete the fermentation but if you think it finished well then...great. Glad you got it.

Heller,

You're right that was the problem, a few days ago I added some raisens and wheat germ. That I guess was what finally got it going a little faster.RC red also suggested I taste it and the sweetness was gone, but was probably there before I added the nutrients. Thanks to both of you guys ran it today and got almost 2 heart qts of very OK rum.
